Winter Squash and Red Pepper Soup
A little bit of cinnamon and ginger add wonderful flavor to this soup.
(Serves 4)
Ingredients
- 3 ½ c. winter squash, any type, cooked
- 1 T olive oil
- 1 c. onion, chopped
- 1 T garlic, chopped
- 4 oz. roasted red pepper
- 3 c. chicken stock
- ½ c. dry white wine
- 2 T agave syrup
- 1 t cinnamon
- ½ t dried ginger
- Optional: 1 T reduced fat sour cream
