Avocado Salad

Got ripe avocados? Try this simple and easy-to-make salad with a burst of lime flavor. (Serves 1)

Ingredients

  • 1/2 t olive oil
  • 1/2 t lime juice
  • 1/2 carrot, shredded
  • 1/2 c. cabbage, shredded
  • 4 slices avocado

Directions

Whisk olive oil and lime juice together in a bowl. Add carrots and cabbage. Stir to coat. Gently fold avocado slices into salad.
